10-Minute Extra Veggie Mac & Cheese

A tasty, toddler-approved recipe from Yummy Toddler Food

To make the recipe: 

Ingredients: 

  • 1/2 cup warm milk

  • 1/2 cup squash or sweet potato puree

  • 1/2 cup white beans

  • 1 tablespoon butter

  • 1 cup shredded cheddar cheese

  • Pasta of your choosing

  • Salt & garlic powder to taste

Directions: 

Add 1/2 cup warm milk, 1/2 cup squash or sweet potato puree, 1/2 cup white beans, 1 tablespoon butter, and 1 cup shredded cheddar cheese to a blender. (You can omit the beans and just stir it together for an easier option, too.) Stir a little of the cheese sauce into 8 ounces of cooked pasta at a time for the consistency you prefer. Add a little salt or garlic powder for extra flavoring as you like.

Tip: Save any leftover sauce in an airtight container in the fridge or a freezer bag in the freezer for future meals.
