Recipe: Pink Pasta

This pasta is packed with a secret hidden veggie that makes it bright pink and perfect for the month of love.

Ingredients:

  • 3-4 c. pasta of choice

  • 1 large beet

  • ¾ c. part-skim or low sodium ricotta cheese

  • 2 tbsp extra-virgin olive oil

  • 2 tbsp lemon juice

*Optional: Salt to taste, ricotta and chopped basil garnish as desired

Directions: 

  1. Clean your beets and put them in a pot of water until covered. Bring pot to a boil and cook until beets are tender. This takes about 45 minutes. **If you are short on time - try Trader Joes packaged beets that are already cooked! 

  2. Cook the pasta in a large pot of lightly salted boiling water.

  3. While the pasta cooks, roughly cube the beets and put them in a blender. 

  4. Drain your pasta, setting aside 1 cup of pasta water for your sauce. 

  5. Into the blender add ¼ cup pasta water, the ricotta, olive oil, lemon juice, and 1 teaspoon salt (optional). Blend until smooth. NOTE: you can always add more pasta water to make the sauce extra glossy and smooth. 

  6. Transfer the pasta to your Lalo bowl. Pour the sauce over the top and toss until pretty and pink.  

  7. Scatter basil and ricotta (optional) over the top of the pasta. 

  8. Enjoy!

Tip: Chopped walnuts are also a great garnish on this recipe that add texture and flavor, but we would recommend grinding quite fine to reduce any choking risks (or simply omit from baby's plate!)  

 

Activity: Love Letters ❤️

Nothing beats getting a hand-made Valentine from the one you love most. Plus, this one uses the leftover dried pasta from our recipe!

Love Letters

  1. Gather your supplies: Heart shaped doilies (or cut sheets of construction paper into heart shapes), stickers, pens, glue, paper, and dry pasta!

  2. Help your little one glue their doilies and/or paper materials together into a layered heart.

  3. Then, decorate with pasta and stickers.

  4. Once the valentine is assembled, help them write a love note in the middle to their favorite valentine (mom & dad are always on our list!). ❤️
